Chinese Broccoli Soup Recipe

Chinese Broccoli Soup
1 packet of Ideal Protein Leek Soup         1 head of broccoli
4 cups of water                                               fresh ground pepper and chopped chives
Chicken or vegetable light broth cube or powder to taste
Boil water in a pot. Add salt. Blanch broccoli, bottoms down, in boiling water for 1-2 min only, for maximum taste and color (and greater enzyme goodness). Drain and immerse in ice-cold water to preserve the bright green color. In a blender, pour 2 cups of cold water, the packet of Ideal Protein Leek soup and the broccoli. Blend for 1 min until smooth. Dissolve broth cube or powder in 2 cups of boiling water and add to broccoli soup. Garnish with fresh ground pepper and chopped chives.

New Recipe- Colorful Salad

Colorful Salad

Preparation: 10 min                               Servings: 4

Ingredients:
Salad
2 large bunches arugula, tough stems trimmed
2 heads radicchio, cored, outer leaves discarded
2 endives, trimmed
4 large red radishes, sliced
2 tbsp snipped fresh chives

Dressing
¼ cup apple cider vinegar
2 tsp Dijon mustard
1/3 cup extra-virgin olive oil
Salt and freshly ground black pepper to taste

Preparation:
Shred radicchio leaves. Halve the endives lengthwise and sliver thinly. Place the arugula, radicchio, endives, radishes and chives in a large salad bowl. Whisk together vinegar, mustard, salt and pepper in a separate bowl. Whisking constantly, slowly drizzle in the olive oil and continue whisking until combined. Before serving, season the salad with salt and pepper. Drizzle lightly with the dressing and toss well.
