Garlic-Dijon Dressing
3/4 cup extra-virgin olive oil
1/3 cup lemon juice
1/3 cup vinegar
1/4 cup Dijon mustard
4 small cloves garlic, minced
1/2 tsp sale
freshly ground pepper, to taste
Combine oil, lemon juice, vinegar, mustard and garlic. Blend shake or whisk until smooth. Add salt and pepper.
Makes about 1 3/4 cup.
